    Responsibilities

    Plans, organizes and directs culinary staff associated with patient menus and recipes including Room Service, House Menus, and Gero Psych Service and maintains all Hospitality Suite patient and retail foodservice recipe files. Manages ordering for department food, nonfood and smallwares supplies; oversees food production equipment maintenance program; establishes and monitors culinary staff cleaning plan in conjunction with Head Chef Retail and Catering Operations. General responsibilities include financial and resource management, personnel management, marketing and quality control in conjunction with the Head Chef of Retail Services & Catering Operations.

    Qualifications

    Education Background

    • Minimum of an Associate’s Degree (Culinary Arts, Food & Nutrition, or Food Service Management) required. Bachelor’s degree in Culinary Arts, Food and Nutrition, or Food Service Management. Without degree in Culinary Arts, additional coursework and training for at least 1 year required for either degree.

    Licensure, Registration, Certification

    • Food safety certification (e.g., SERVSAFE® certification) preferred.
    • Washington State Food worker’s permit required.

    Special Training/Skills

    • Requires demonstrated personal computer knowledge and skill including the ability to use spreadsheet applications and work processing programs.
    • Requires demonstrated knowledge of:
      • Regulatory standards and regulations, preferably Joint Commission & Department of Health.
      • HACCP standards and application.
      • Industry standards (key result indicators).
      • Food service operations and production systems, including patient food services and food presentation.
      • Food purchasing and purchasing computer systems; vendor management and negotiations; product specifications.
      • Marketing, customer service, revenue enhancement.

    Work Experience

    • Minimum of five years executive chef or food service management experience in a complex, multi-faceted food service operation required. Healthcare experience preferred.
    • Minimum of 5 years experience in purchasing required.

    Physical Abilities

    • For the efficient delivery of services to customers, this job requires sufficient English-language skills to understand and be understood when interacting with customers, visitors, patients, coworkers, and management.

    Physical Demand Level: Medium

    In an 8-hour workday, must be able to-

    Lift / Carry

    20 to 50 pounds occasionally

    10 to 25 pounds frequently

    up to 10 pounds constantly

    As required, must be able to -

    Sit, Stand, Walk, Bend, Squat, Kneel, Crawl, Climb and Reach above shoulders

    Push and Pull

    Perform fine motor functions

    Must possess functional vision, hearing, and speech in order to communicate effectively with clients, client advocates, and staff.
